Refried Beans
A protein-packed, delish, Instant-Pot-easy dish featuring chuck

Ingredients:
- 16 oz pinto beans
- 3 cups chicken broth
- 1.5 lb roast
- Salt and pepper
- 1 onion, halved
- 1-2 cups shredded cheese
- Optional garnish: sour cream, pepper, cilantro
Directions:
- In an instant pot, or pressure cooker, add the beans, broth, roast, salt and pepper, halved onion (skinned)
- Cook on high pressure for 3 hours.
- Naturally release the pressure, and use a stick blender to blend the beans smooth, including the beef and onions.
- Add cheese to the mix and stir in the beans and serve.
- Optional: garnish with sour cream, cilantro and pepper.
