Refried Beans

A protein-packed, delish, Instant-Pot-easy dish featuring chuck 

  • Difficulty (0 = Caveman, 5 = Thomas Keller): 1
  • Serving size: 6
  • Prep/cook time: 2 hours, 30 minutes
  • Meat temp: Well


  • 16 oz pinto beans 
  • 3 cups chicken broth 
  • 1.5 lb roast 
  • Salt and pepper 
  • 1 onion, halved 
  • 1-2 cups shredded cheese
  • Optional garnish: sour cream, pepper, cilantro 


  1. In an instant pot, or pressure cooker, add the beans, broth, roast, salt and pepper, halved onion (skinned)
  2. Cook on high pressure for 3 hours.
  3. Naturally release the pressure, and use a stick blender to blend the beans smooth, including the beef and onions. 
  4. Add cheese to the mix and stir in the beans and serve.
  5. Optional: garnish with sour cream, cilantro and pepper.
