Quesadillas
A timeless Mexican classic that’s easy for a quick weeknight meal.

Ingredients:
- Tortillas
- 8 oz roast
- Shredded cheese
- 1 cup beef tallow
- 3 bell peppers, sliced
- 1/2 onion, sliced
- Salt and pepper
- Guacamole, as desired
- Sour cream, as desired
- 4 oz mushrooms
Directions:
- In an instant pot, add the roast, mushrooms, salt and pepper, onion and bell pepper and cook on high pressure for 2 hours, release naturally.
- Take one tortilla, use your recipe, but roll them larger, and fill with bell pepper and beef mix and cheese to your liking.
- Top with a second tortilla.
- In a pan large enough to hold your little cheese girl, place some beef tallow down and let it melt.
- Place the tortilla down and cook on medium heat in the tallow for 3-5 minutes.
- Peek at the tortilla with a spatula until its golden brown.
- Flip and repeat.
- Remove from heat and lightly salt the exterior.
- Peel open the melted cheesy quesadilla and fill with guacamole and sour cream and close shut.
- Cut and serve with Mexican rice and refried beans.
