Our facility is located onsite where the animals are. This allows the animal to be harvested ethically and with low stress because there is no interruption of their routine by packing them onto a trailer and hauling them to a different place. Our facility also has less capacity to keep cross contamination to a minimum and this makes for a more managable system of cleanliness.
Once the animal has been harvested it is stored in a cooler onsite for a period of two weeks to ensure that the rigor has left the muscle tissue. This will help the meat to be tender.
You have the option to tell us how your meat will be processed into cuts and how much hamburger you want.
